Those close to me are well aware that whenever there is a cooked chicken on the table, I invariably gravitate toward the chicken wings. My love affair with chicken wings has been a flavorful journey that started when I was just a little girl.

There's something undeniably captivating about chicken wings that transcends culinary boundaries and brings people together. These humble morsels, often overshadowed by more prominent cuts of poultry, have carved out a special place in the hearts and palates of millions worldwide. SAVORY CHICKEN WINGS WITH BROCCOLI

Servings: 4

Ingredients:

  • 1 kg chicken wings, cut into 2
  • 1 tablespoon fish sauce
  • 2 tablespoons soy sauce
  • 2 tablespoons oyster sauce
  • 2 tablespoons white sugar
  • 1 tablespoon black pepper
  • 1 teaspoon sweet paprika
  • 1/2 teaspoon chili powder
  • 1 cup all-purpose flour
  • 1 packet Magic Sarap mix (or a similar seasoning)
  • 1 small head of broccoli, cut into florets
  • 1 medium onion, finely chopped
  • 4 cloves garlic, minced
  • cooking oil for frying

Directions:

  1. In a bowl, combine the soy sauce, white sugar, fish sauce, and oyster sauce. Mix well to create the marinade. Add the sweet paprika and chili powder to the marinade for an extra kick of flavor. Mix thoroughly.
  2. Place the chicken wings in a large Ziploc bag or a bowl. Pour the marinade over the chicken and toss to coat evenly. Seal the bag or cover the bowl and let the chicken marinate in the refrigerator for at least 30 minutes, or ideally, for a few hours to absorb the flavors.
  3. In a separate bowl, combine the all-purpose flour and Magic Sarap mix. This will be your seasoned flour for coating the chicken.
  4. Heat cooking oil in a deep frying pan or a deep fryer to 350-375°F (175-190°C) for 8-10 minutes.
  5. Remove the marinated chicken wings from the refrigerator and dredge each piece in the seasoned flour mixture, making sure they are evenly coated.
  6. Carefully place the coated chicken wings into the hot oil and fry until they are golden brown,  about 8-10 minutes. You may need to fry them in batches to avoid overcrowding the pan. Drain the fried chicken wings on paper towels to remove excess oil.
  7. In a separate pan, heat a little oil over medium heat. Add the chicken wings, minced garlic and chopped onions and sauté until they become fragrant and translucent, then add the marinade over the chicken wings for extra flavor.
  8. Add the broccoli florets to the chicken wings, garlic and onions. Season with black pepper, salt, oyster sauce and fish sauce. Stir-fry for a few minutes until the broccoli turns bright green and slightly tender.
  9. Serve the savory chicken wings with the stir-fried broccoli, garlic, and onions.

My youngest daughter surprised me with the good news that she was allowed to go on Eid vacation for some days. She badly needed rest and relaxation for a work-life balance.
